Our founder, Mark Jones, has spent more than 20 years behind the bar in 4- and 5-star hotels across the UK and the Republic of Ireland.
His career began at the upmarket Dublin restaurant, Whites on the Green, where he served as a silver service waiter. From there, he travelled to the Isle of Man to train as a wine waiter and sommelier at King Edward Bay. Mark worked on his craft, moving to several 4-star hotels in Bournemouth, where he worked as a bartender. He also worked at the Europa Gatwick hotel as part of their Conference and Banqueting Department.
Mark has also worked at St. Pierre Park, Guernsey, as a cocktail bartender, and, later, at the 5-star Merion Hotel in Dublin as a senior bartender.
He is now a Personal Licence holder and Member of the British Institute of Innkeeping. With his extensive experience, he founded Whaley’s Mixology in 2017, imparting his extensive knowledge and expertise onto his hand-picked team, which has been working parties and events across the UK ever since.
